Speed ratings

Unless otherwise indicated, all of the tires in the list are speed rated "H" (for Sustained Running Speed of 130 mph) or "V" (for 149mph continuous). Some companies make front and rear in H and V, some in only one or the other. It is perfectly fine to combine the two, ie... running H on the rear and V on the front, or vice versa. This will have no effect on the performance of your bike.

Speed ratings have nothing to do with performance. They only designate recommended top sustained speed. If you have two versions of the same tire with different speed ratings, the only difference is often the tread depth. The higher rated tire will have less tread depth. So, unless you're planning on running for an extended length of time at 149mph (V rated speed) you might as well stick with the H tire (which is rated for a measly 130mph).
